Women Power Foods – Tomatoes
You’ve always heard that tomatoes are a smart way to get your daily vegetable dose, but did you know tomatoes are a naturally powerful vegetable that can improve your health in multiple ways? Tomatoes are a good source of vitamins, A, C, K, foliate and potassium as well as thiamin, niacin, B6, and magnesium. They are also naturally low in sodium, cholesterol and calories. [i]
What all of this means is that by regularly consuming tomatoes your body is getting lycopene that can reduce the risk for certain cancers and osteoporosis. Not to mention that tomatoes’ anti-inflammatory qualities can help regulate blood sugar, protect the skin from UV rays, and can help reduce chronic pain. The best part about tomatoes is that they are easy to find in your local super market, or even grow in your own backyard. Homegrown tomatoes don’t have any of the chemical enhancements of some mass produced tomatoes and give you the health benefits of being outside in a garden.
Grilled Tomatoes with Basil Vinaigrette[ii]
3 yellow tomatoes
3 red tomatoes
3 tablespoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons white balsamic vinegar
2 tablespoons chopped fresh basil
Garnish: fresh basil sprigs
- Cut tomatoes in half; thread onto skewers, alternating colors. Brush with 1 tablespoon oil; sprinkle with salt and pepper.
- Grill, covered with grill lid, over medium heat (300° to 350°) 10 minutes, turning skewers often.
- Combine remaining 2 tablespoons oil, vinegar, and basil; drizzle over kabobs. Garnish, if desired.
